supper happy with tonight's dinner! Very satisfying & delicious
Salmon poached with chives and garlic, over zoodles in a mushroom alfredo sauce.

I had spiraled zucchini for the first time today! It was good, but not as good as spaghetti squash!

Spaghetti squash is great, but I never see it. My trick is to steam the zoodles first, rather than sautee. Or the best result I had was from frozen. They were a lot softer (but not mushy).
