Debbie Cousins's Journal, 15 Dec 22

Things have been a little busy the past couple of days. My MIL has covid. Yesterday, I made her some Potato Soup and my husband made her some Pimiento Cheese spread. Our church Christmas party for Saturday has been cancelled because so many people are sick (or afraid of getting sick if they go. SO, I’ve got 4 pounds of fudge with pecans (after giving some away) and 5 pounds with no nuts, a half Franklin Nut Cake, and a double batch of pimiento cheese spread - all that were made for the party. Dangerous times (food wise)!!! Knees have been a little better. Thank you for all the kind thoughts and prayers!

Do you have a homeless shelter you could donate your tasty treats to? I'm glad your knees are better. My husband had both his knees replaced and it was game changing for him. He no longer can ride his Harley or gracefully step up into his stirrup, but his quality of life is so much better.

Another possibility for all the treats is freeze them. Put them in the bottom of your freezer so it will be a lot of work to take everything out to get to it. That way you really have to work at getting it out instead of having it on top and just reaching in and grabbing some. Yes I know it's more work to take everything out to put the tempting things on the bottom but then it also takes more time and work to get to it hopefully discouraging you from overeating.

Give it all away. That's what you were going to do anyway. Make up some gift packs and give it to the elderly and the needy. Brighten the holidays for others (and for yourself). 🌟🌟🌟

There is so much stuff going around right now, but here it seems everyone wants to pretend it's not happening. It's hard, but wise, to cancel some of these gatherings when the situation calls for it. I concur with the freezing and/or giving away strategies. It may be a temptation to you, but a blessing for someone else. Nevertheless, over the last few months, we've seen you exercise moderation and keep your goals in the forefront. I have faith in you that you can continue that! And so glad your knee is feeling better! Still think you should have it looked at by a doctor, but the relief I'm sure feels good 😊

Gift it to your local police, fire station or nursing home. They'll love you for it

Never thought of donating the goodies to a service organization. Great idea! I gave 18 pieces of fudge to my daughter last night - barely made a dent in the container. We've been eating the Pimiento Cheese dip on crackers. There were two bowls of it, so we are saving one for our family get-together on Christmas Eve. Might take some of the Franklin Nut Cake to church members on Sunday. Lots of good options - thanks for the suggestions!
