struggling with a lactose allergy and learning how to eat in order not to trigger it. Too much starch lately. Also working on low sugar and low lactose as well as low gluten recipes. Recent adaptation, almond flour scone. So far, pretty crumbly. need to buy extra ingredient to give more coherence and to give baking powder something to lift against. I just looked up the fact that "Yeast, eggs, xanthan gum, and baking powder/soda are the key ingredients that will give you the best rise." I will keep working. I like almond flour because it helps get away from so much carb, and stevia is great because it's "natural" and easily assimilated, they say.
