Quick and yummy soup.
Ingredients
Directions
- Stir fry the onion in low fat cooking spray for 5 minutes.
- Add the sliced carrots, vegetable stock and seasoning (salt and pepper) to taste.
- Simmer for 15 minutes until the carrots are tender.
- Add the chopped coriander.
- Liquidize and serve.

You can use Kitchen Basics Unsalted Vegetable Stock to eliminate the excessive Sodium and not sacrifice the taste! Otherwise, I loved the soup.

Delicious and very filling for such a relatively small allotment of calories. I did have to get past the texture, which is a little similar to that of baby food. I didn't have fresh coriander so I substituted 2 tsp ground coriander and it worked well. Overall, it was very tasty and I would make it again.
