Turkey & Vegetables Skillet

A quick, easy and low calorie turkey meal.

Ingredients

Directions

  1. Spray non-stick cooking spray in a large skillet.
  2. Brown turkey and onion over medium heat until turkey is cooked through and onion is soft, about 10 minutes.
  3. Add tomatoes, tomato paste and seasonings. Simmer over medium heat for 10 minutes.
  4. Add zucchini and cook for 5 minutes more. Serve while hot.
  5. Note: based on a recipe from Champions for Change.

I made this & used 1lb ground turkey, used 1 can fire roasted tomatoes instead of whole tomatoes (with all juice), added fresh, minced garlic ( 3 cloves) to onion, & 1cup each red & yellow peppers, cut in large chunks. It was very good & very filling.

Great flavor, good combination of seasonings. Hubby loved it, he's not a big fan of zucchini so I used green pepper and chopped spinach served over pasta.

Simple and delicious! Don't drain the meat or else the tomato paste will be too thick.

This was a very good dish. Instead of fresh tomatoes I used canned, seasoned tomoatoes. You could always mix it up and used something other than tomatoes for you sauce, but its a nice low-cal option. Very Good!!

Made this for the first time tonight. It was very good but my husband is not big on tomatoes - may try next time with a little less tomato paste and add some celery, bell pepper and mushrooms or maybe use stewed tomatoes. I also added a small amount of water to thin it.

Made this for dinner tonight...Quick and easy. My husband even liked it and he's not a fan of ground turkey! Had to add a bit of water to thin out the tomato paste, but other than that, I'll definitely keep it on the menu!!
