Spinach and Leek White Bean Soup with Ham

Easy to make, delicious and filling soup, that can be made vegetarian with a few substitutions.

Ingredients

Directions

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add the leeks and garlic. Sauté until tender.
  3. Stir in the chicken broth, cannellini beans, turkey ham and cumin.
  4. Bring to a boil, then reduce heat to low.
  5. Stir in the couscous. Cover and simmer for 5 minutes.
  6. Stir in spinach and season with salt and pepper.
  7. Serve immediately.

This soup doesn't really need the couscous. It's better to make it separate and put it over the top so as it stays for a few days it doesn't continue to expand. Otherwise, very good and super easy to make on a weeknight.
